Canning food for long term storage offers a number of benefits. Foods that are canned can retain much of their nutritional value, are generally free of chemicals and preservatives and maintain a better texture than their fresh food counterparts. However, canning your own food can also be a very satisfying and economical hobby or even business. It does require a bit of equipment and can be very challenging at first, but with a little practice you can learn the basics and soon be able to produce excellent canned meals.

The most important part of canning food is making sure that all surfaces are thoroughly cleaned so as not to allow the growth of bacteria or fungus. This is particularly important if using canning foods such as fish, meats or fruit and vegetables. Meat needs to be washed thoroughly and then marinated or smoked before canning. Vegetables can be washed and then dried in the air, but must be kept on the short side in order to prevent burning. Some vegetables such as potatoes can even be canned whole.

To make the canning food items ready for freezing, you will need to store them in a refrigerator or freezer and then thaw them using boiling water method then place them in the canning jars or containers. Depending on your storage and cooking requirements, you can choose from several canning methods such as canning jars, canning buckets, canning mason jars, canning terra cotta jars, ceramic jars or glass jars. Glass jars allow a good air circulation and ventilation and are recommended for use with all types of food.

There are many different types of processed food that can easily be preserved through canning. A good example is prepackaged foods where meat, fish or other processed food is preserved by canning and drying processes. Homemade preserved food can also be a source of dietary fiber, which is beneficial for people who are on vegetarian diets. Vegetables, canned green beans, pickles, peas, mushrooms and others can be prepared as fresh and tasty meals if canning them is done properly.

Canning foods that are rich in vitamin C like oranges, tomatoes and other citrus fruits can also spoil quickly if they are not stored properly. A solution of one part vinegar and two parts water can be used in jams and jellies to preserve the foods. Dried fish and meats are especially important for diabetic patients because diabetics have a poor ability to process carbohydrates and must rely on natural sugar from fruits and vegetables to satisfy their sweet cravings. Aside from these, fruits and vegetables that are canned can also be used in sauces and marinades and can be eaten on their own or added to other foods in salads and stir fries.

Although canning has been used for several years, food preservation is still one of the most popular ways of preserving foods at home. Preserving home food can be as simple as adding a pinch of salt to a jar of salsa or marinate a meat in some garlic and salt and let it marinate overnight. To preserve fruits and vegetables in as much flavor as possible, canning recipes can always be followed. Just remember to place proper amounts of liquid in the jars to avoid containers leaking all over the kitchen.
